Crunch Time: Chef Garrett's Crispy Tacos with Momo's Michelada Kick

Here’s the Recipe:
Momo’s Crispy Beef Tacos
WHAT YOU NEED:
3 tbsp Momo’s Michelada mix
2 lbs ground beef
6 flour or corn tortillas
1 jalapeño
1 medium white onion
2 Roma tomatoes
½ cup shredded cheddar cheese
Cilantro
Creamy avocado sauce(store bought or homemade)
1 avocado
⅓ cup low fat milk
Salt
Handful cilantro
⅓ cup Greek yogurt
1 lime
HOW IT’S DONE:
If you went with homemade avocado sauce as you should, combine the avocado, milk, salt, cilantro, Greek yogurt and lime juice in a food processor and mix until consistent. Add a little more milk if it is too thick.
Heat a large skillet over medium heat. While the skillet is preheating, dice the onion, jalapeño and tomatoes.
Add oil then sauté the onion for 1-2 minutes. Add 2 lbs of ground beef and cook for 5-6 minutes. Once it is almost fully cooked remove excess grease from the skillet. Add Momo’s, tomatoes, jalapeño and salt then mix and cook for 3-4 minutes.
Preheat oven to 350 degrees. Line an oiled baking dish with tortillas then add cheese to half the tortilla. Top with the Momo’s ground beef mixture then add more cheese. Close the tortillas then spray the tops with more oil.
Bake in the oven for 10 minutes until cheese is melted and crispy on both sides.
Add to a plate then top with fresh cilantro and creamy avocado sauce and enjoy!

What I’d do different
I would use corn tortillas so they wouldn’t bubble up as much in the oven.
