Spice Up Your Steak Night with Momo's Michelada Magic!

Alright, listen up. If you're fixin' to fire up the grill and you're tired of the same ol' slab of beef, then you need to try this. We're talkin' Momo's Steak Pinwheels, and they ain't messin' around. We're rollin' up tender flank steak with a chimichurri that's got a real zing thanks to Momo's Michelada Mix and a hit of Momo's Stupid Rim Salt. Throw in some crispy fried shallots and salty cotija, and you've got a bite that'll make you sit up and pay attention. Even Chef Beirne himself called it a perfect 10 out of 10. So ditch the boring and get yourself some real flavor. This is how Texans do steak.



WHAT YOU NEED

2 tbsp Momo’s Michelada mix

1 tsp Momo’s Stupid rim salt

¾ cup fresh parsley

1 habanero pepper

½ tsp oregano

2 tbsp olive oil

Frying oil.

2 cloves garlic

Salt

2 lb flank steak

BBQ steak rub

1 shallot

⅓ cotija cheese

Butcher twine

HOW ITS DONE

Start by preparing the Momo’s chimichurri, chop parsley and habanero then add to a small bowl. Add oregano, olive oil, minced garlic, Momo’s, and stupid rim salt. Mix, cover and set aside.

Heat a small pot over medium-high heat. Add frying oil. While the oil is heating up thinly slice 1 shallot, fry for 2 minutes until crispy then pat dry.

Place flank steak on a cutting board, cover with plastic wrap then hammer to tenderize and flatten. Season on both sides with your favorite steak rub.

Add a thin layer of Momo’s chimichurri, crispy shallots, and cotija cheese to the steak. Roll until tight, then add butcher twine under the rolled steak. This should create 5-6 pinwheels a little over 1” thick. Tie then cut the excess string off.

Preheat the oven to 380 degrees. Add the pinwheels to a baking sheet then bake for 10-12 minutes flipping halfway through.

Heat a skillet over medium-high heat. After baking the steaks sear on each side for 1 minute.

Remove the string then slice in and enjoy!
